Vitamin D2, D3 and D4


GreenMedia on 7 August 2015 brings a great deal of information on Vitamin D and the humble mushroom with regards to its vitamin D content.   It is very interesting reading and I was delighted to learn that the Shitake Mushroom not only produce vitamin D2 but also produce vitamin D3 and vitamin D4.  WOW!    Click this link to read the article.

 

I recently started to make a Shitake and Chicken Mushroom soup and have this most days with a Cruskit spread with Avocado.

 

Chicken, Shiitake and Bok Choy Soup - 6 serves

  • 8 cups canned low-salt chicken broth
  • 6 ounces fresh shiitake mushrooms (about 10 large), stemmed, caps sliced
  • 2 tablespoons minced peeled fresh ginger
  • 3 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oriental sesame oil*
  • 1/4 teaspoon chili oil*
  • 3 cups thinly sliced bok choy
  • 4 teaspoons rice vinegar*
  • 2 green onions, sliced

Preparation

Bring broth, mushrooms and ginger to boil in large pot. Reduce heat and simmer 3 minutes. Add fish sauce, soy sauce, sesame oil and chilli oil and simmer 2 minutes. Add bok choy and simmer until bok choy is tender, about 2 minutes. Stir in rice vinegar. Season soup to taste with salt and pepper.  Ladle soup into bowls. Sprinkle with green onions and serve


I put cut up chicken thighs into the broth and cook until the chicken is tender and then I follow the recipe.  I also add the spring onions to the soup as I freeze some of this away for future meals.   I hope you enjoy this as much as I do.


On a personal level I soak my chicken pieces in a very powerful product which releases the toxins from inside as well as off the surface.  I find that if I do this prior to cooking the broth that the top of my broth remains pretty clear.  If I do not do this soaking then I am having to ladle a dark yellow scum off the top of the broth.   If you wish to learn more about this please email me.
